This is a sandwich, but then it's heated through in a pan, so then it could be dinner?
I might have been planning it all day. Possibly drawing it on a post it.
You don't have to make the same one, you might hate artichoke hearts. You might love olives (I have no idea why you would).
This is less of a recipe, more of a recommendation that on a hot day, you slice some bread, nice and thick, slather it with some ripe avocado.
Cut up some red onion and throw that on.
Pile up some sliced artichoke hearts and some fresh coriander.
If you happened to have some leftover roasted garlic in the fridge, that'd be a good thing to add too.
Cover the other slice in some good hummus.
Smush those two halves together and put 'em in a pan that's had the tiniest bit of olive oil wiped over it. Put something heavy on top of the sandwich and leave over a medium heat for a minute or two, then flip and do the same on the other side.
You could slice up a load of cabbage and carrots and cover with some lime juice, coriander and wholegrain mustard.
Pretty good dinner.
I know a sandwich isn't a proper recipe, come talk to me when it's cooler. Go make a sandwich, I forgot how good they are, maybe you did too!

I love sandwiches, too, and I don't think you should have to apologize for writing about one here! It's a recipe, and it looks effing awesome -- you've inspired me, at the very least.
I mean, heck: This summer I feel like all I've eaten have been tofu-lettuce-tomato sandwiches, and it's been the best summer ever. Coincidence? I THINK NOT.
please be my flatmate so I can eat delicious food like this
A well-done sandwich is a thing of beauty and by god, I won't have anyone tell me otherwise.
Instead of hummus, though, I would have probably slathered it with that guilty pleasure of mine, Veganaise.
Thanks Meister! I thought it was worthy of a mention, sandwichesforlife!!
Cesar, totes going to happen.
Marisa I completely agree, I didn't even think of Veganaise! Defs would have added that!
Sandwich in a pan?! Well I never....but then I guess that's just the equivalent of a toastie machine right?
