It's almost Autumn! The winds are definitely picking up, I've seen a couple of fallen leaves and the branches on the apple tree in the garden are drooping right down to the floor, heavy with all the fruit, begging to be put into pies and crumbles and cakes and MY MOUTH.
Sometimes I'd pick one that had a big wormy worm inside, I'd make this face.
I found a little secret grape vine growing through the tree (thanks neighbours!), with bunches of perfect little grapes on it! Too bad they tasted like battery acid. (thanks neighbours.)
This sticky cake has got the best texture, it's easily overcooked so you need to keep an eye on it but it's dense and moist and apple-y and sweet and you should make it.
You'll need:
for the apple caramel layer:
1/4 cup melted vegan margarine
1/4 cup brown sugar
2-3 medium-large apples (really depends what size cake pan you're using, I used a heart shaped silicon pan, yep.)
For the cake batter:
1/4 melted vegan margarine
1 cup soy milk
1/8 cup sunflower oil
1/2 cup sugar
2 cups plain/all purpose flour
1 tsp bicarbonate of soda
1/4 tsp salt
2 tsp ground cinnamon
Pour the melted margarine for the caramel layer straight into your pan, then sprinkle the brown sugar evenly across it. Peel and core your apples and cut them into little wedges, then arrange evenly in the margarine/sugar mix.
In a bowl whisk together your soy milk, margarine and oil, then add the rest of the batter ingredients and mix.
Pour the mix over the apple gently, try not to let the caramel get all mixed in, gently does it.
Put your cake pan onto a baking sheet and bake at 350F/Gas mark 4/180C for about 25 minutes. After 25 minutes check on it every couple of minutes, as soon as an inserted knife comes out clean, take it out of the oven. This cake easily gets too crunchy on the top, and the top is the base, no crunchy bases.
Leave it to cool for a couple of minutes then flip it onto a serving dish. If some apple pieces fall out just shove 'em back in and act like it was meant to happen.
It's a cake you should make for your family, it's not too showy full of strange ingredients, it's comforting and it's cute and it's goddamned delicious.

Ooh, cheers for posting this. My friend keeps giving me apples from her allotment. I'll have to give this recipe a go.
It's still 36 degrees here in Japan every single day, and we are all dying for even a little hint of fall. I saw on the news a while ago that apples can get sunburn, too, and that's not a good thing for its producers... So let's see how this year's apples turn out.

I just made this cake! I googled "vegan apple upside down cake" and yours was the one I chose because the pictures were sooo pretty. I'm currently waiting for the cake to cool, but I snuck a nibble from the side and wow... so good. Thank you!
