roasted broccotato soup with chickpea croutons



This is me ripping off one of Celine's delicious recipes. I wanted soup, and I wanted this soup. There are some things that we can't get over here in the UK so below is my way (for brits who can't lay their hands on liquid smoke), use Celine's if you can get the right stuff!


To make enough for 4-6 people you'll need:


(for the vegetable base)
1 whole, peeled shallot
1 lb/450g of small potatoes, halved
1/2 tsp salt 
2 tbsp olive oil
12 oz/350g broccoli florets


(for the chickpea croutons)
2 tbsp soy sauce
1 tsp wholegrain mustard
1/2 tsp smoked paprika
1 1/2 tsp maple syrup
6 whole, peeled garlic cloves
1 can drained chickpeas


4 cups/940ml vegetable stock


Grab a baking tray and put the halved potatoes and the shallot on it. Add 1 tbsp of the oil and 1/4 tsp of salt and shake around to coat. 




Put into the oven at Gas mark 6/400F/200C for 10 minutes.


During that 10 minutes that they're in the oven, you need to get the broccoli and the chickpeas ready. Put the broccoli florets into another tray and add the remaining oil and salt and mix. 




Grab one more tray (last one!) and put all of the chickpea crouton ingredients in together and make sure it's all thoroughly mixed.




Once 10 minutes have passed with the potatoes, put the broccoli and chickpeas into the oven too for another 10 minutes. When the potatoes have been in for 20 minutes, take them out and flip them (maybe roll the shallot around a bit too) and put everything back in the oven for another 10 minutes. 




After the total 30 minutes is up, take everything out. Grab a big pan and put the potatoes, broccoli and half of the chickpea mix into it. 




Add the vegetable stock and leave to simmer for 10 minutes. Put it all into a blender and blend to the right thickness for you. I like it chunky, I hate those smoothy smooth soups. 


It is SO good. It's really filling and the chickpea croutons are just the best thing I've ever done with a chickpea.

And as to the liquid smoke, you just have to ask one of us who routinely make the great pilgrimage for US ingredients. Liquid smoke came back with us last time.

I have never seen such small potatoes before! That soup sounds amazing I love everything roasted and of course I love Celine's recipes! I often use smoked paprika instead of liquid smoke, too. I do find liquid smoke online at BBQ shops. Maybe you can find it there too.

oh yeah maybe you could add a touch of ground cumin too, along with the smoked pap'? it helps lend a slight smokiness to dishes. Rachael Ray told me so. wait, RR barked it so.

They sell liquid smoke on this website http://www.americansweets.co.uk/american-stubbs-hickory-liquid-smoke-1351-p.asp which I keep meaning to order from.
Of course, it's out of stock at the moment, but maybe it'll be back in stock before you get back over there? You never know :)

No liquid smoke!?!?! How is it that I can easily find that over here in KSA but you can't find it over there? Craziness!

But, no matter, it looks like your soup is stupendously delicious without a bit of liquid smoke. I love the combination of broccoli and potato so I will have to give it a try.

And wow. That truffle cake looked irresistible the first time you posted it...but now...ohmygogoodogdd.....

I have seen liquid smoke in Whole Foods Kensington by the mexican sauces. The chickpeas are a wonderful idea for croutons!
