edamame mint soup


Hey! Are you looking for something full of springtime goodness that's low in fat and high in the feeling of being full up right until dinner time? You are?! It's your lucky day dollface.

I had this miserable mint that was looking sadder and sadder in a glass of water in the fridge for a few days and couldn't bear to leave it any longer. Look how mopey it was.


I only had a 1/4 of a bag of frozen peas stashed away so pea and mint soup was out, but a brand new bag of frozen edamame was looking me straight in the eyes begging to be used. You could try and eat a giant bowl of this but you wouldn't get very far, all that protein in the beans supercharges how full up you'll feel. Plus it's goddamned delicious.

This made enough for four, I froze it in a tupperware box and it defrosts like a DREAM.


You'll need:
1 tbsp olive oil
1/4 tbsp toasted sesame oil (if you've got it, no biggie if you haven't)
4 cloves garlic, peeled and chopped
1 red onion
1" piece of ginger, peeled and chopped
3 cups edamame beans, fresh or frozen
1 cup peas, fresh or frozen
4 cups vegetable stock
1 leek, chopped
the juice of half a lemon
a bunch of floppy old mint, about this much:


Put the oils into a pan over a medium heat and add the garlic, onion, leek and ginger. Lightly saute them until they soften up, then add the edamame, peas and vegetable stock. Bring to a boil, then turn the heat down slightly and simmer for about 15-18 minutes.


Once the edamame start to lose their bite a little, add the mint and the lemon juice.


Stir everything together, then put into the blender. They're so tough that you can't use an immersion blender for this, you need a big daddy blender that can really chop. Blend until you're happy with the texture (if it's too thick for you, add a little water at a time). Season with some salt to taste.


I tried to think of an edamame pun here but I couldn't come up with one. Please share if you have one, it's driving me nuts.

Oh my gosh! I've said it before, and I'll say it again - you are a genius! This looks SO incredibly delicious, what a perfect springtime soup! I love love love edamame and we JUST (like, this morning) got about 10 bags of it. We haven't been able to find it in about 4 months or so, so we stocked up. Thank you for this!
