
Quick recipe post for you my lovelies, too busy (and sleepy) to ramble on and on but this recipe is rad. I've had it for dinner the last few days, and am having it for lunch again tomorrow, that's just how delicious it is. I'm happy to eat it as it is but you could chuck a couple of veggie sausages at it if you like.
To make enough for dinner for 2 you'll need:
1 cup quinoa (rinsed)
1 tbsp sunflower oil
1 red onion
1 inch of finely chopped fresh ginger
a pinch of chili flakes
1 heaped tsp of turmeric and ground coriander
1 3/4 cups water
3/4 cup frozen peas
a decent sized bunch of fresh coriander
a couple of handfuls of cashews
Oh quinoa! so delicious. Ok, so you need to put it into a fine mesh sieve and rinse it well, then put to one side.
Chop the onion and put it in a pan with the oil over a medium heat for about 5 minutes until softened. Then add the ginger and spices for another minute or so. Stir around a bit and add the quinoa.

Give it a couple of minutes to get thoroughly mixed, then add the water and half of the fresh coriander. Bring to the boil, then put the lid on the pan and leave to simmer until all the water's been absorbed.
Add the peas now (you might need to just pour in a tiny bit more water) and leave until the peas are cooked. Only takes a couple of minutes.

Just before serving add the rest of the coriander and the cashews.

I'm drooling as I type, gross.

ooh I was thinking about cooking up some quinoa and this looks like the recipe! Although we're a nut free house so it'll be without the cashews, do you think it would take too much away from the dish to leave them out? Looks yummy!
Yum, cashew, quinoa, peas and coriander - literally my favourite ingredients. Put a bit of roast butternut squash on the side and I am in heaven!

What a wonderful colour! This looks really delicious, I love peas, criander, and cashews together.
ibakewithout: I'd recommend sunflower seeds. It's not the same as cashews, but I find these two are the tastiest crunch to add to grains.
Sounds like a nice recipe. Could perhaps use a sprinkle of lemon juice?

I made this for dinner again tonight and it was DELISH once again! I wanted to have it for dinner again tomorrow night BUT it was so yummy I ate too much and will only have enough left over for my lunch. Ooops! :)

this is very quick recipe and so easy to do, I am happy to eat it, cause it really taste a lot, ingredients are so easy to get in the market.
it looks so sweet, just to eat it, this an important recipe because sometimes we dont have anything to make, and I think this will be amazing to make.
I feel wierd for asking this, but am I the only person who can't seem to see the curry in the curried quinoa recipe? How much, if any, do I use?
Hi anonymous, the spices are what give it the curried flavour, there is no curry powder in the recipe.
