blackberry chocolate easter cake


I wanted to make an easter cake for you guys. This one's blackberry and chocolate, and I was getting a bit bored of always taking photos so I made you a little video instead. I made an easter blackbird out of wire and string and I love him!

If you use a mini bundt pan you could fill the middle with anything, cream and berries like in the video, chocolate eggs like the bird would have liked, a blackberry mousse, anything!

3/4 cup plain flour
1/4 cup cocoa powder
3/4 cup sugar
1/2 tsp salt
3/4 tsp
baking soda
1/3 tsp baking powder
3/4 cup soy milk
a handful of fresh blackberries

Combine all the ingredients (dry first, then wet) and the blackberries and stir until mixed. Either grease and line a cake tin, or use some cupcake papers in a cupcake pan and add the mixture about 2/3 of the way up.

Bake at Gas mark 5/190C/375F. For a decent sized cake bake for around 25 minutes, for cupcakes about 10-15.

A word of warning – this cake is seriously rich, and you only need tiny slices per person.
