Just a quick one for you here my friends, an easy one to make for lunch or dinner. The thyme isn't essential, just gives it a nice herby edge.
You'll need:
1 red onion
4 cloves garlic
olive oil
2 cans butter beans
2 cans chopped tomatoes, or an equal amount of passata
4-5 sprigs of fresh thyme
1/2 dried chili flakes (or more if you like it spicy)
2 tbsp treacle
1 tbsp wholegrain mustard
Chop the onion and fry over a low heat in a decent sized splash of olive oil. Once softened, add the chopped garlic and the leaves off a thyme sprig. Stir around a bit, then add the rest of the ingredients.
Leave to simmer over a low-medium heat until the sauce has reduced a bit. Serve with warmed pitta.
