Ok my friends, I'm back! Christmas is over and I'm baking again. These were a quick batch of cookies I rustled up yesterday to test out one my Christmas presents, look!
Safari cookie cutters! So cute. I had a bag of dried blueberries in the cupboard (and you know how much I love blueberries) so I chucked those in with a bit of cinnamon, and you end up with a crumbly cookie with chewy fruity bits. Good for a little one's birthday party, or me.(click here)
To make about 20 you'll need:
2 cups all purpose flour
a pinch of sea salt
1 1/2 tsp ground cinnamon
1/3 cup vegan margarine
3/4 cup icing/confectioners sugar
1/4 cup canola/sunflower oil
1/4 cup warm water
1 cup dried blueberries
Mix together all the fluid ingredients, then add the flour and sea salt and cinnamon. It'll be a bit crumbly, you just need to pick it up and smush it together with your hands.
Don't bother getting a rolling pin, just flour your worktop and slap the lump onto it, then press it down evenly with your hands.
When you cut out the cookies, try to avoid cutting onto a blueberry or your shape will break when you lift the cutter back up. Pop the cookies onto a non-stick baking tray or a silicone baking sheet and put into the oven at Gas mark 4/180C/350F for 14-18 minutes, depending on the thickness. Just wait for the edges to brown, not the whole cookie, then remove and leave to cool.
You could decorate them however you want, I used some melted chocolate, then stuck sprinkles on.
And for the little elephant, i just drew him a face with a toothpick.
I also made some of the old trusty heart shapes, make them for your lover! Or for yourself for some new year's lovin'.
