Hello my lovelies. As those of you who live (like me) in tweetsville, you'll know that I just got a new job which means plenty of time for drudgery and not much time for baking so today I made these little cakes before my shift, and here I am writing them up for you after my shift. Good time management is on my C.V. for a reason!
Do you recognise that gorgeous little tin? It's been half full of sweet chestnutty paste for ages, ever since I made this brownie recipe.
This is a pretty basic 'use the average cupboard junk' recipe, the only unusual thing is the chestnut paste. You get such a fudgey little cake though. Nomnom.
I used those big muffin papers for these, if you use the little cupcake papers you'll get 12-ish cakes, about 6 for the muffin size.
You'll need:
1/2 cup vegan margarine
1/2 cup sugar
1/2 cup sweetened chestnut paste
2 tbsp dark cocoa powder
1/2 cup plain flour
1/2 cup self raising flour
1/4 cup sunflower/canola oil
1/3 cup soy milk
So beat the sugar and marg together, then add the chestnut paste, cocoa, and flour and soy milk and beat together. It'll be thick but you can do it! Then add the oil and be sure to beat it all in. Uh...that's it. Perfect for before work.
Mmm, doesn't that look appetising? yeah...maybe not.
Scoop some out and fill to the top-ish of your papers, they don't rise very much. Bake in the oven at about Gas mark 3.5/170C/350F for around 25 minutes. They've got a high sugar content so they'll burn easily at a high heat so take it easy. They're done when the top is all browned and a knife or skewer stuck in comes out clean.
Take them out and leave them to cool, dust with some cocoa and icing sugar and you're all set!

Those look amaaaazing! The taste must be out of this world!!! I wish I could find chestnut paste because I bet these little beauties would become my new favorite thing. Great photo!

Thanks Tasha, maybe you'd have more chance of finding it now that it's around christmas? Or maybe you could try using pureed chestnuts that you sweeten yourself? hmmm.

Katy, I'm in the uk and I get it from a supermarket here called Waitrose, you could probably get it from a wholefoods place, or a supermarket with a big enough inventory!
