Just a quick post to show you the potato salad that I linked to in the last post. I added cashew nuts and a teaspoon of whole-grain mustard to the original recipe (here, from the vegan visitor).
It's so good for a lunch and creamy like you'd have mayonnaise, but obv no mayo plus low calorie.

it sounds to eat this dish, so healthier and light for us, it is so creamy and it looks nice cause I love avocados.
