Vegan banana bread for snowy days


I like banana splits, banana runts, banana shampoo, the singing banana in the peanut butter jelly time cartoon, the phrase 'top banana', and I LOVE banana bread. 
I don't like banana republic much.
This makes one delicious loaf which works well as breakfast, elevenses and pudding. 
You'll need: 
3 ripe bananas
1 tsp vanilla essence
1 cup of sugar
2 cups of self-raising flour
1 tsp baking powder
1 tsp cinnamon
a couple of handfuls of walnuts
1 tbsp water

Mash the bananas with the vanilla until smooth. Sieve the flour, baking powder and cinnamon into the banana mix. Add the sugar and mix thouroughly. I threw in some walnuts I had in the freezer at this point, they're not compulsory though. Add the water and mix again. Pour into a lined loaf tin and cook on 150C/300F for 45 minutes. Check on it after 35 by sticking a knife in and seeing if it comes out clean.

Best banana bread I ate so far !! And believe me I tried some (I have a crush on banana flavoured cake) it's becoming my new favourite banana bread recipe.
