THE chocolate chip cookie recipe.


I've been looking for a decent cookie recipe for a while and I think I've found it! It's a recipe from the Magnolia bakery cookbook that I've tweaked and made vegan and it's pretty damn good. I've now got a full tin of cookies that are a little bit chewy, little bit crunchy.

Makes about 2 dozen
You'll need:
2 cups all purpose flour (plain flour)
1 1/2 tsp baking soda
1/2 tsp salt
2/3 cup vegan margarine
3/4 cup granulated sugar
1/4 cup canola/sunflower oil
1 tsp vanilla extract
1/2 cup of dark chocolate chips

Preheat the oven to 350F/180C.
In your nicest mixing bowl, cream the margarine and sugar until smooth. Add the oil and vanilla and mix well. Sift in the flour, baking soda and salt ad beat thoroughly. Stir in the chocolate chips.
Roll a spoonful of the dough in your hands into a ball then press slightly onto an ungreased cookie sheet to make a disc shape. Bake for between 5 and 8 minutes, depending on the size, until golden brown.
They'll be squishy when you take them out of the oven but they harden as they cool so leave them a couple of minutes once you take them out of the oven, then transfer to a wire rack.
