Here is the one of the many puddings I made for Christmas. It's really dense, delicious and heavy and creamy and the most important, chocolatey. The whole thing disappeared by boxing day. Plus, no cooking involved so even more time to open presents.
You'll need:
A tin of chestnuts (put them in the blender, or if you can find it, a tin of chestnut paste)
6oz caster sugar
6oz of vegan margarine
9 oz of melted dark chocolate. I used green and blacks 85% cocoa dark chocolate.
Zest of an orange
Some of the juice from the orange
a bit of brandy
Beat together the margarine and sugar and then stir in the mashed up chestnuts. Pour in the melted chocolate and stir again. Add the zest and about half the juice from the orange. If the mixture gets too stiff just add more juice. Pour in about two teaspoons of brandy, or more if you're a boozehound.
Line a loaf tin with clingfilm and pour in the mixture. I say pour but it'll be pretty firm by the point so maybe spoon it in. Leave it to chill in the fridge overnight and cut yourself a HUGE slice for breakfast.
This would be a good thing to eat for a birthday breakfast.
