Warm on a winters day-chickpea spinach and cashew curry



My sister came to stay for less than 48 hours and now she's gone again. We had some friends over yesterday and I made this to feed everyone. I don't like having siblings spread around the world, I want them in my back garden climbing trees and skimming stones.

This is really filling and the cheapest thing to make ever. Also pretty spicy so halve the amount of chili flakes if you don't like the spice.

It served 6 of us with a bit leftover for bento the next day.

You'll need:
2 tbsp sunflower oil
3 red onions, chopped
3 tsp ground coriander
3 tsp ground cumin
1 tsp dried chili pepper flakes
1 tsp turmeric
2 cans of chopped tomatoes
2 cans of chickpeas, drained
250g of spinach
a couple of handfuls of cashews

Heat the oil and add the chopped onions until they get soft. Then add the spices and chili flakes and mix for a couple of minutes. Pour in the tomatoes and chickpeas and leave to simmer for about 25 minutes. Add some salt and pepper and the spinach. Once the spinach is completely wilted, throw in the cashews, stir around and serve over brown rice.
