Start spreading the news, I'm leaving today - chocolate walnut brownies


Leaving London always feel like leaving a warm spot where I've spent days enveloped by friends and surprises and familiarity. The extra long train journey back to Wales always leaves me feeling deflated. 
When I finally got home with aching feet and a total sadface I needed to cook something reassuring and delicious. These brownies are the gooiest EVER and perfect for anyone who just left the people and place they love and are already itching for next time.

This made about 10 brownies.
You'll need:
some cheering up
125g self raising flour
200g caster sugar
65g dark cocoa powder
pinch of salt
2 tbsp melted soya butter
2 tbsp water
1 tbsp vegetable oil
a handful of chopped walnuts
dark chocolate to melt and put on top

Stir together the flour, sugar, cocoa powder and salt. Pour in the melted soya butter, water and vegetable oil and stir until gooey. Add the walnuts. Spread it into a suitable pan and bake for 25 minutes or so at 350F/ 175 C until it's not shiny on top anymore. Leave for 10 minutes or so to cool down and then cut and pig out.
